How to Steam Broccoli

Broccoli is one of my favorite vegetables so I keep it around steamed so I can easily use it in a variety of dishes.

To easily steam broccoli, wash and pat dry with clean dish towels or paper towels.

Cut off the thick stem until the top florets look like trees.

Add to a steamer and steam until starting to get tender.

Quickly remove from pot so cooking doesn't continue.

Store in covered containers in refrigerator until you need to use it.

How to Refresh Asparagus


Fresh asparagus is delicious as long as the spears don't get tough.

To make sure I am serving the freshest part of the spears, I pop off the bottom of the stem with my hands. By applying gentle pressure, the less fresh part will easily break off.

Wash in cold water; pat dry with a clean dish towel. Then prepare in your favorite recipe. With the hard ends broken off, the asparagus will taste fresh-picked.

Welcome to A Teaspoon

When I think of home, I think of my mother and her wonderful home-cooked
meals and recipes. We grew up with home-cooking, spending Friday nights in the kitchen
cooking for each other to give Mom a night off.

For the record, when you are 10 years old and try to make a chocolate chip cookie the size of a cookie sheet,
then eat it – you get a whopper of a stomach ache, just ask my brother David!

I like simple, healthy cooking. I use locally-grown produce, experiment
with flavors and try to remember to write down the recipe…
